I'm not much of a soup person except in the winter. I love chicken soup but I don't follow a specific recipe. Usually it's chicken, carrots, celery, maybe some onion, with a bit of basil, thyme, and pepper. Sometimes I'll throw in a couple of potatoes but that's rare - potatoes are mostly for beef stew IMHO. I never add salt due to blood pressure issues - everyone can add salt after the fact. After every thing is cooked up I throw in some rice to both add a more substance and thicken it up a bit.
I've made turkey soup following the same general recipe just with turkey instead. Some people use egg noodles instead of rice. I'm not a big fan of that.
